After years of planning and preparation, Polly’s Hospitality Institute has now taken over the daily operation of Edgar’s, the restaurant at PHI. Macon’s only student-run culinary arts restaurant is open for lunch only Monday through Friday, 11 a.m. until 2 p.m. and the menu changes each week.
On Mondays and Tuesdays, our International and Classic Cuisine class prepares an international buffet. Each week we will venture into a different country exploring the country’s unique cuisine.
Then Wednesday through Friday, our restaurant techniques class will produce a weekly changing menu that will explore different American regional cuisines. During the three days, the students will be split into two groups learning both the front and back of the house operations.
